Homogenization is a mechanical process by which the fat molecules in the milk are broken down into smaller sizes and the smaller size fat molecules are dispersed evenly throughout the milk instead of rising to the top to make colloidal solution like emulsion. This process resists the tendency of the fat molecules to make cream layer and float on the top of the milk.

Without homogenization the fat molecules will float on the top of the milk.
